Clarified Butter
Origin
Clarified butter is regular butter that has been melted and separated — water and milk solids are removed, leaving pure butterfat. Ghee is a further-cooked version with a nuttier flavor. For popcorn, clarified butter provides the rich butter flavor without the water content that causes sogginess.
Flavor Profile
Pure butterfat with concentrated dairy sweetness and a subtle nutty undertone (especially if ghee). No milk solids means a clean, rich butter taste without the milky tang of regular butter. Higher smoke point than regular butter, allowing more heat without burning.
Use in Popcorn
Melt and pour over freshly popped popcorn, or mix with a neutral oil for tossing. Because it is pure fat with no water, it coats evenly without steaming the popcorn. Use generously — 2–3 tbsp per batch of 1 lb kernels gives a rich, buttery finish. Keep warm in a small saucepan or heat-proof container while tossing batches.
Notes
Stands up well to infused flavorings — garlic, chili, or herb-infused clarified butter makes an excellent base. Store clarified butter at room temperature for weeks; it will solidify when cool. Ghee has a deeper, nuttier flavor — good for savory popcorn but can overpower delicate seasonings.
