Avocado Oil

Origin

Avocado oil is pressed from the flesh of avocados. Available in both refined (light) and unrefined (virgin) forms. Refined avocado oil has a very high smoke point (~520°F / 270°C) and a nearly neutral flavor, making it one of the best oils for high-heat popcorn popping.

Flavor Profile

Refined avocado oil is nearly flavorless with a faint creamy undertone that doesn’t compete with seasonings. Unrefined/virgin avocado oil has a distinct grassy, avocado-forward taste — generally not ideal for popcorn unless you want that flavor. The high fat content and neutral profile make it an excellent carrier for oil-based flavorings.

Use in Popcorn

Use as the popping oil at 2–3 tbsp per 1/3 cup kernels. Its high smoke point means you can pop at a steady medium-high heat without scorching, and the oil stays clear and clean-tasting. Excellent for experiments with infused oils since its neutral character lets other flavors shine. Pairs well with butter flavorings — use as a base and add clarified butter or butter extract on top for richness.

Notes

More expensive than canola or vegetable oil, but the higher smoke point means less oil degradation and better flavor transfer. Refined light avocado oil is preferred for popcorn. Virgin avocado oil is too flavorful for most popcorn applications. Store in a cool, dark place; the oil is stable and has a long shelf life.
